A glass of txakoli and some small pintxos are a great way to kick off a meal of magnificent Basque-inspired dishes at Sebastian restaurant. Chef Gianni Moretti delivers one knock-out course after another, from a revelatory combination of sea urchin, flying fish caviar, crème fraiche, apple and seaweed salad, to an umami-rich slow-cooked pork neck that sings when teamed with delicate plum sauce.

To hotel nerds, he’s the man who reimagined what a wine country stay could be.When his Tower Lodge opened its majestic doors in the Hunter Valley 23 years ago, this extravagant update of a Spanish mission - complete with fountain dancing in the cloistered courtyard - lifted the bar for the industry. Now, after almost a decade in the dark, followed by a $6 million renovation, Tower Lodge is back as the newest addition to the @spicersretreats portfolio, and the news is all good. It’s one wow moment after another at the Maldive It’s one wow moment after another at the Maldives’ first dedicated wellness retreat. The adults-only @joalibeing opened late last year and its facilities, spread across the lush island, are extraordinary. There are half a dozen different forms of hydrotherapy, a herbology centre, high-tech options like 3D posture analyses and the Maldives’ first cryo-chamber, and relaxing choices including meditation, sound therapy and anti-gravity yoga. The food is next-level, the design is fantastic and the staff are gorgeous. And did I mention the sister resort, the equally sensational @joalimaldives, just a quick boat ride away?Read all about it in today’s @financialreview.
